Marinating the Chicken
Prepare Marinade: In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, pepper, and paprika.
Marinate Chicken: Place the chicken breasts or thighs in the bowl with the marinade, making sure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Baking the Chicken
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare Baking Dish: Transfer the marinated chicken to a baking dish. Pour the chicken broth into the dish around the chicken pieces to keep them moist during baking.
Bake: Bake the chicken in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy. If the chicken is browning too quickly, cover it loosely with aluminum foil.
Broil (Optional): For extra crispy skin, you can broil the chicken for an additional 2-3 minutes, keeping a close eye to prevent burning.
