Chimichurri steak pizza with Asiago and fresh mozzarella cheese

Instructions:

Prepare the Chimichurri Sauce:

In a food processor, combine parsley, cilantro, garlic, olive oil, red wine vinegar, lemon juice, oregano, red pepper flakes (if using), salt, and pepper.
Pulse until finely chopped but not completely pureed. Set aside.
Cook the Steak:

Season the steak with salt and pepper on both sides.
Preheat a grill or a grill pan over medium-high heat.
Grill the steak for 3-4 minutes per side for medium-rare, or until it reaches your desired level of doneness.
Remove the steak from the grill and let it rest for 5-10 minutes. Then slice it thinly against the grain.
Prepare the Pizza:

Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to preheat as well.
Roll out the pizza dough on a lightly floured surface to your desired thickness.
Transfer the rolled-out dough to a piece of parchment paper for easy handling.
Brush the dough lightly with olive oil.
Assemble the Pizza:

Spread a thin layer of chimichurri sauce over the pizza dough, leaving a small border around the edges.
Evenly distribute the shredded Asiago cheese over the chimichurri sauce.
Add the slices of fresh mozzarella cheese on top.
Arrange the thinly sliced steak over the cheese.
