Traditional Black Pudding Recipe
🧂 Ingredients:
1 liter (about 4 cups) fresh pig’s blood (or rehydrated dried blood powder)
250 g pork fat or suet, finely diced
200 g oatmeal (medium or coarse)
1 large onion, finely chopped
1 tsp salt
1 tsp black pepper
1 tsp ground allspice (optional)
½ tsp thyme (optional)
Sausage casings (natural hog casings are traditional)

Prepare the ingredients
Finely chop the pork fat and onion.
Soak the oatmeal in warm water or milk for 10–15 minutes to soften.
Cook the onion and fat
In a pan, gently fry the onion and pork fat until soft and translucent (do not brown).
Let it cool slightly.
Mix the pudding batter
In a large bowl, combine the blood, soaked oatmeal, onion, and fat.
Add salt, pepper, and spices. Mix thoroughly until well blended.
The mixture should be thick but pourable — like a heavy batter.
Fill the casings
Rinse the sausage casings well.
